Wild Things Wine is very interesting and yet sometimes mysterious. The flowing world of wine runs deep and wide, so many- so much. We all have a few familiar names; chardonay, merlot, shiraz. As we learn more about anything, our appreciation for it grows. We know wine is fermented from great grapes, fortified wine has added distilled spirits, and barley ferments to beer. Now did you know wines fermented from wild harvest things, like berries, nuts and flowers, are called Country Wines? As producers of many "other than standard" wines, we would like to help define these special treats. These special vintages offer singular personalities. Nothing compares to those small but intensly flavored berries, or the aromas of dandelion or elderblow. The winemakers job is to capture the essential aromas, flavors and colors. The harvest can last for two or more seasons, aging up to two years. These wines require understanding, persistance and patience. At the end of the day nothing comes closer to nature than these no nonsense Country Wines- We like to call them Wild Things.
